Blue Corn Tortilla Chip-Crusted Salmon

Ingredients

  • 4 (5-ounce) salmon fillets
  • 2/3 cup coarsely crushed Full Circle Market Organic Blue Corn Tortilla Chips
  • ½ cup chopped mango
  • ½ cup Full Circle Market Mild Garden Style Salsa
  • Sliced green onions and/or lime wedges for garnish (optional)

Method

Preheat oven to 400°. Place salmon on a parchment-lined baking pan sprayed with cooking spray; press chips onto salmon and spray with cooking spray. Bake salmon 15 minutes or until internal temperature reaches 145°. Stir mango and salsa in a bowl; serve over salmon. Garnish with sliced green onions and lime wedges, if desired.
