Cocoa-Cashew Cookies

Ingredients

  • 1 Full Circle Market Grade AA Cage Free Large Brown Egg
  • 1 cup coconut sugar
  • 1 cup Full Circle Market Organic Cashew Butter
  • 1½ tablespoons unsweetened cocoa powder

Method

Preheat oven to 350°. Beat egg, sugar, cashew butter and cocoa powder with mixer on medium speed in a large bowl. Roll heaping tablespoons into balls and place on rimmed baking pan lined with parchment paper; press into ¼-inch-thick disks with back of fork, then turn fork 90° and press with back of fork. Bake cookies 15 minutes or until bottoms are golden brown; transfer to wire rack and cool 10 minutes. Makes about 10 cookies.
