Carrot and Apple Salad with Golden Raisins

  • 3 tablespoons Full Circle Market Organic Extra Virgin Olive Oil
  • 2 tablespoons Full Circle Market Organic Honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Full Circle Market Organic Dijon Mustard
  • 1 large Full Circle Market Organic Granny Smith Apple
  • 3 medium Full Circle Market Organic Carrots
  • 1/3 cup golden raisins
  • ½ cup coarsely chopped pecans


Whisk together oil, honey, vinegar and mustard in a medium bowl. Peel and core apple, slice into thin wedges; toss into dressing. Peel and thinly slice carrots. Add carrots and raisins to apple and dressing, tossing to coat. Serve sprinkled with pecans. 4 servings.
