Dilled Pea and Potato Soup

  • 1 tablespoon Full Circle Market Organic Butter
  • ¾ cup chopped Vidalia onion
  • 2 pounds Yukon Gold potatoes, peeled, diced
  • 1 quart Full Circle Market Organic Vegetable Broth
  • 1 bag (12 oz.) Full Circle Market Organic Frozen Peas
  • ¼ cup chopped Full Circle Market Organic Dill
  • Full Circle Market Sea Salt
  • Full Circle Market Organic Pepper


Place butter in a Dutch oven or stockpot over medium heat. Add onion and cook until soft. Add potatoes and broth. Bring to a boil, reduce heat and simmer 15 minutes. Add peas and continue cooking 3 minutes. Remove 1 1/3 cup cooked vegetables to a bowl using a slotted spoon. Use a hand blender or food processor to process broth and remaining vegetables until smooth. Stir reserved vegetables back into soup; add dill and season with salt and pepper to taste. 4 servings.
