Quinoa Tabbouleh

  • 1¾ cup water
  • 1 cup Full Circle Market Organic Quinoa
  • 1 cup fresh Full Circle Market Organic Cucumber, diced
  • 1 cup fresh Full Circle Market Tomatoes, diced
  • ¾ cup fresh Full Circle Market Organic Curly Parsley, chopped
  • ¼ cup chopped green onions
  • 2 tablespoons Full Circle Market Organic Mint Leaves, chopped
  • 3 tablespoons Full Circle Market Extra Virgin Olive Oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon salt
  • ½ teaspoon freshly ground Full Circle Market Pepper


Bring water to boil in medium saucepan, stir in quinoa and return to a boil. Reduce heat to low, cover and simmer 15 to 20 minutes or until water is absorbed. Remove from heat, spoon into large bowl and fluff with fork. Cover and refrigerate ½ hour. Remove cover and add cucumber, tomatoes, parsley, green onion and mint. Combine oil, lemon juice, salt and pepper in a small bowl, drizzle over quinoa mixture and toss to combine and coat. Cover and refrigerate 1 hour. Serve chilled or at room temperature. 6 servings.
