  • 1 tablespoon Full Circle Market Organic Extra Virgin Olive Oil
  • 1 small lime
  • 1 medium zucchini, diced
  • 1/2 cup diced Full Circle Market Organic Red Pepper
  • 1 small jalapeno pepper, seeded, minced
  • 1 cup sliced fresh okra
  • 1 teaspoon Full Circle Market Organic Frozen Chopped Garlic
  • 1 can Full Circle Market Organic Black Beans, rinsed, drained
  • 1 cup Full Circle Market Organic Frozen Corn, thawed
  • 1/2 teaspoon Full Circle Market Sea Salt
  • 1/4 teaspoon ground Full Circle Market Mixed Peppercorns
  • 1/4 cup chopped Full Circle Market Organic Cilantro


Place oil in large non-stick skillet over medium heat. Cut 4 thin slices from lime and juice the remainder, set juice aside. Sear the lime slices in the skillet on both sides, remove and reserve. Add zucchini, red pepper and jalapeno to skillet, sauté 3 to 4 minutes or until vegetables begin to soften. Add okra and garlic and sauté 3 minutes. Add beans and corn and continue cooking until heated through. Add reserved lime juice, salt and pepper. Serve garnished with seared lime slices and sprinkle with cilantro. 4 servings.
