Tuscan Sausage and Kale Soup

  • 12 ounces fresh hot Italian sausage links
  • ½ cup chopped Full Circle Market Organic onion
  • 1 tablespoon Full Circle Market Organic Olive Oil
  • 2 cloves garlic, minced
  • 1 (32 oz.) carton Full Circle Market Organic Chicken Broth
  • 3 small Full Circle Market Organic Red Potatoes, diced
  • 1½ teaspoon Full Circle Market Organic Italian Seasoning
  • 1 (15 oz.) can Full Circle Market Great Northern beans, rinsed,
  • 1 (5 oz.) container Full Circle Market Baby Kale
  • ¼ cup shredded Parmesan cheese
  • Freshly ground Full Circle Market Black Pepper


Brown sausage in large stockpot over medium heat. Add onion and olive oil, cook until onion is soft. Add garlic and cook 2 minutes longer. Add broth, potatoes and Italian seasoning, bring to boil, reduce heat and simmer 12 minutes. Remove sausage, cool several minutes and cut into 1/4-inch thick slices. Return sausage to pot; add beans and kale . Continue simmering 12 to 15 minutes. Serve sprinkled with cheese and pepper. 4 servings.
