🍽️ Makes 6 total servings
🥦 11 total ingredients (including the garnish)
⏱️ Total time is 55 minutes

Ingredients:
- 2 tablespoons olive oil
- 1 yellow onion, finely chopped
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
- 6 cups Swiss chard, washed and chopped
- 2 teaspoons kosher salt, divided
- 2 teaspoons red wine vinegar
- 1 (15-ounce) can Full Circle Market Organic Three Bean Blend, drained and rinsed
- 8 large eggs
- 1/2 cup half-and-half
- 1/2 cup grated Parmesan cheese

How to make:
1. Preheat oven to 375°F. Heat oil in a 10-inch oven-proof skillet over medium heat. Add onion, garlic and red pepper flakes, and sauté until onion softens, about 5 minutes. Add Swiss chard and salt and cook, stirring frequently, until wilted, about 8 minutes. Add vinegar and beans and stir to combine.

2. In a large bowl, whisk eggs, half-and-half and cheese until combined. Pour mixture into skillet and let cook for 5 minutes, or until the edges just begin to set.

3. Transfer skillet to the oven and bake for 20-25 minutes, or until the frittata is puffed and light golden and it is set in the center.

4. Cool at least 10 minutes before slicing and serving.

- 2 medium carrots, diced
- 2 stalks celery, diced
- 3 garlic cloves, minced
- 1 (12 oz) bag broccoli florets
- 6 cups veggie broth
- 1 tbsp fresh thyme
- Salt & pepper
- 2 cups fresh baby spinach
- 2 tbsp lemon juice

For serving:
- sour cream
- cilantro

How To Make Them:
1. Heat oil in a pot, sauté pepper & onion mix, carrots, celery for 5-6 mins. Add garlic & broccoli, cook 1 min.

2. Add broth & thyme. Bring to boil, season, simmer 15 mins. Add spinach & lemon juice, simmer 5 mins.

3. Puree soup until smooth. Top with sour cream & cilantro.
