This Beans & Greens Frittata feeds a crowd, reheats beautifully, and comes together with simple, wholesome ingredients!

Ingredients:
- 2 tablespoons olive oil
- 1 yellow onion, finely chopped
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
- 6 cups Swiss chard, washed and chopped
- 2 teaspoons kosher salt, divided
- 2 teaspoons red wine vinegar
- 1 (15-ounce) can Three Bean Blend, drained and rinsed
- 8 large eggs
- 1/2 cup half-and-half
- 1/2 cup grated Parmesan cheese
Method:
1. Preheat oven to 375°F. Heat oil in a 10-inch oven-proof skillet over medium heat. Add onion, garlic, and red pepper flakes; sauté 5 minutes.
2. Add Swiss chard and salt; cook until wilted, about 8 minutes. Stir in vinegar and beans.
3. Whisk eggs, half-and-half, and cheese in a bowl. Pour over veggie mixture and cook 5 minutes, until edges begin to set.
4. Transfer skillet to oven; bake 20–25 minutes until puffed and golden. Cool 10 minutes before slicing.
