Baked Sweet Potato Cakes

Serves: 10 cakes

Ingredients

  • 1 large egg
  • 1 teaspoon Full Circle Market Organic Paprika
  • 1 large sweet potato, peeled and grated on largest holes of box grater
  • ¼ cup Full Circle Market Almond Flour
  • Sliced avocado, chopped green onion and/or chopped fresh parsley for garnish (optional)

Method

Preheat oven to 450°. Whisk egg, paprika and ½ teaspoon each salt and black pepper in a large bowl; stir in sweet potato and almond flour. Drop 2 tablespoonfuls potato mixture onto rimmed baking pan sprayed generously with cooking spray; shape into ½-inch-thick patties. Bake cakes 22 minutes or until golden brown, turning once; serve garnished with avocado, green onion and/or parsley, if desired. Makes 10 about 10 cakes.
