Stewed Coconut Beef with Cauliflower Steaks

Ingredients

  • 1 head cauliflower, cut crosswise into 4 (¾-inch-thick) “steaks”
  • 1 pound ground beef
  • 1 (13.5 oz.) can Full Circle Market Organic Unsweetened Coconut Milk
  • 1 cup Full Circle Market Organic Tomato & Basil Pasta Sauce
  • Fresh basil leaves for garnish (optional)

How to Make:

    Step 1

  1. Preheat oven to 400°. Place cauliflower steaks on a rimmed baking pan; spray both sides with cooking spray. Bake 25 minutes or until tender, turning once.
  2. Step 2

  3. Cook beef in a large skillet over medium-high heat 7 minutes, stirring frequently. Stir in coconut milk and pasta sauce
  4. Step 3

  5. Reduce heat to medium and cook 8 minutes or until slightly reduced. Season with salt and pepper to taste. Serve cauliflower steaks topped with beef mixture garnished with basil, if desired.
