Ingredients
- 4 medium red, orange and/or green bell peppers, sliced vertically in half through stem, seeds removed
- 1 (12-ounce) package Full Circle Market Applewood Smoked Uncured Bacon, chopped
- 1 pound ground turkey
- 8 slices Full Circle Market Organic Sliced Provolone Cheese
- Chopped fresh basil, salsa and/or toasted pine nuts for garnish (optional)
Method
Preheat oven to 425°. Place peppers, cut side down, on rimmed baking pan; roast 10 minutes or until slightly tender. Cook bacon in large skillet over medium-high heat 8 minutes or until crisp; transfer to paper towel-lined plate. Discard all but 2 tablespoons drippings from skillet; add turkey and cook 8 minutes or until browned. Stir in bacon. Turn peppers; stuff with turkey mixture and top with cheese. Roast peppers 3 minutes or until cheese is melted. Garnish with basil, salsa and/or nuts, if desired.
