Herb-Marinated Great Northern Beans

Ingredients

  • 2 (15-ounce) can Full Circle Market Organic Low Sodium Great Northern Beans, drained and rinsed
  • 1/2 cup plus 2 tablespoons olive oil, divided
  • 1/4 cup red wine vinegar
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1 small red onion, minced
  • 1 tablespoon plus 1 teaspoon kosher salt, divided
  • 2 teaspoons black pepper, divided
  • 1 baguette, sliced into 1/2 inch rounds

Method

1. Combine beans, 1/2 cup olive oil, vinegar, parsley, dill, mint, red onion, 1 tablespoon salt and 1 teaspoon pepper in a large bowl. Toss gently to combine. Let marinate at room temperature for at least 30 minutes before serving.
2. While beans marinate, preheat oven to 375°F. Season sliced baguette with remaining olive oil, salt and pepper. Spread into an even layer on a rimmed baking sheet. Bake for 8-10 minutes or until golden-brown.
3. Serve marinated beans with crostini.
