  • 4 strips Full Circle Market Uncured Bacon
  • 4 Full Circle Market Organic Large Eggs
  • ½ cup Full Circle Market Organic 2% Milk
  • ½ teaspoon salt
  • 1/8 teaspoon pepper
  • ¾ cup shredded Mexican Cheese blend
  • 4 large flour tortillas (9 to 11 inches), warmed
  • 1 small avocado, seeded, peeled, sliced
  • ½ cup Full Circle Market Organic Black Bean and Corn Salsa
  • ¼ cup sliced green onion
  • 2 tablespoons chopped cilantro


Cut bacon into ¼-inch strips. Fry bacon in large skillet over medium heat until crisp, drain on paper towels, leaving 1 tablespoon fat in skillet. Beat together eggs, milk, salt and pepper. Cook eggs in bacon fat over medium heat, stirring gently until cooked to desired doneness, stir in bacon and cheese until melted. Divide eggs between tortillas. Divide avocado slices, salsa, green onion and cilantro evenly between tortillas, layering over eggs. Fold in sides and roll up tortillas to enclose filling and serve immediately. 4 servings.
