Add the pepper strip & onion, carrots and celery, and cook for 6 minutes, or until the vegetables are tender. Step 2 Add the garlic and broccoli and cook for 1 minute. Add the vegetable broth and thyme to the pot and bring to a boil. Season with salt and pepper. Step 3 Reduce to a simmer and cook for 15 minutes.
